- 1 kilogram Pork tenderloin (ready to cook, trimmed)
- 200 grams Scamorza
- 100 grams Prosciutto (in slices)
- freshly ground peppers
- 1 sprig oregano
- 1 Tbsp olive oil
- salt
Preparation steps

Rinse the fillets, pat dry and cut along the edges so they do not curl. Cut the scamorza into strips about 2-3 cm thickness (approximately 1 inch). Arrange the meat lengthwise with the prosciutto and the cheese showing along the center. Season with pepper.

Rinse the oregano, shake dry and pluck off the leaves. Sprinkle over the filling and roll up the fillet. Tie with kitchen string and brush with the oil. Season with salt and pepper and cook on the grill with the lid closed and at a low heat for 15-20 minutes, turning periodically. Slice to serve.
