- 4 large Tomatoes
- 2 Tbsps chopped parsley
- 4 small round Goat cheese (each about 70 grams)
- 8 Sage
- salt
- freshly ground peppers
- 1 Tbsp White vinegar
- 1 tsp balsamic vinegar
- 2 Tbsps olive oil

Preparation steps
1.
Rinse the tomatoes, remove stems, quarter, core and cut into small cubes. Season with vinegar, salt and pepper. Mix in the parsley and the oil and spread on 4 plates.

Lay goat cheese on a parchment paper-lined baking sheet. Place 2 sage leaves on each round and sprinkle with pepper.
3.
Bake in a preheated oven (220°C/approximately 425°F) or under a preheated oven broiler (watching carefully) until the cheese begins to brown.
4.
Arrange the cheese on the tomato salsa and serve immediately.
