Preparation steps

Soak 12 wooden skewers in lukewarm water for 30 minutes, so they do not burn on the grill later. Preheat a grill on medium-high. Rinse the apricots, cut off ends, and remove the pits. Form small balls of goat cheese and fill the apricots where the pit was previously. Thread 3 apricots on each skewer and cook on the preheated grill on all sides, about 10-12 minutes total. Transfer to plates and sprinkle with the brown sugar.
