Preparation steps

1.

Soak 12 wooden skewers in lukewarm water for 30 minutes, so they do not burn on the grill later. Preheat a grill on medium-high. Rinse the apricots, cut off ends, and remove the pits. Form small balls of goat cheese and fill the apricots where the pit was previously. Thread 3 apricots on each skewer and cook on the preheated grill on all sides, about 10-12 minutes total. Transfer to plates and sprinkle with the brown sugar.

Can't wait to try and make this over the weekend. It looks delicious! Can this be done with other stone fruit as well?

This would be great with other stone fruits such as plums or small peaches.
