Product recommendation
Store in the refrigerator and use within 4 to 5 days. Don't forget to save 2 tablespoons for the next batch!
Preparation steps
1.
Bring milk to just under the boiling point. Pour hot milk into a glass container and let cool to lukewarm or between 100 to 105º F. A skin will form on the top of the yogurt.
2.
Combine the 2 tablespoons of previously made yogurt with 2 tablespoons of milk. Pour this mixture down the side of the glass container, making every effort not to disturb the skin that has formed on the top of the yogurt.
3.
Cover with a clean kitchen cloth, place container in a warm, draft-free place for 8 to 12 hours, or overnight until it thickens. Yogurt must not be disturbed. After 8 to 12 hours, drain off any liquid and store in the refrigerator.
4.
For a thicker yogurt, remove the skin on the top of the yogurt and pour the yogurt into a cheesecloth bag. Hang the bag over the bowl and let liquid drain for 2 hours, or until the desired thickness is obtained. Refrigerate for 4 hours before serving.
5.
Serve garnished with fresh blackberries.
