- 4 Plum
- 2 tsps honey
- 1 Tbsp brown sugar
- ¾ inch freshly grated ginger
- 3 Tbsps butter (well chilled)
- 2 Tbsps Crème fraiche
- ⅜ cup cream (at least 30% fat)
- 1 Tbsp Vanilla sugar

Preparation steps
1.
Preheat the oven to 180°C.

Wash, dry, halve and stone the plums. Lightly butter an ovenproof dish. Place the plum halves in the dish cut side up, sprinkle with sugar and drizzle with honey.
3.
Dice the ginger and scatter around the plums in the dish. Put a small piece of butter in the middle of each plum half and bake in the preheated oven for about 15 minutes.
4.
Whip the cream with the vanilla sugar until very stiff and fold into the creme fraiche.
5.
To serve, put two plum halves on each plate and garnish with ginger and a spoonful of cream.
