- For the cupcakes
- ¾ cup butter
- ¾ cup caster sugar
- 3 eggs (beaten)
- 1 ¼ cups self-rising flour
- 1 tsp vanilla extract
- To decorate
- 1 ⅓ cups white Sugar paste
- powdered sugar
- 1 ⅓ cups yellow Sugar paste
- 3 Tbsps Apricot Jam (warmed)
- pink sugar heart

Preparation steps
1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole bun tin.

Beat the butter and sugar until light and fluffy. Gradually beat in the eggs until blended.

Sift in the flour and beat well. Stir in the vanilla.

Spoon into the paper cases and bake for 20-25 minutes until golden and risen. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.

To decorate: roll out the white sugarpaste thinly on a surface dusted with icing sugar. Cut out small rounds, smaller than the diameter of the cakes with a crimped edged cutter. Reserve the trimmings.

Repeat with the yellow sugarpaste.
7.
Brush the rounds with a little jam and place on top of the cakes - 6 white and 6 yellow.
8.
Cut out 'hares' using a card template and attach to the sugarpaste rounds with a little water, placing the yellow hares on the white rounds and vice versa.
9.
Mark the hares with ears, eyes, mouth and whiskers using a wooden cocktail stick. Place an inverted sugar heart in the centre for the nose.
