- 3 Tbsps honey (or more depending on taste)
- 1 Lime
- 1 ⅔ cups Blueberries
- 2 Tbsps freshly chopped mint

1 Pot, 1 Potato ricer, 1 Bowl, 1 Teaspoon, 1 Tablespoon, 1 Measuring cups, 1 Hand mixer mit Knethaken, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Paper towel, 1 Parchment paper, 1 Baking sheet, 1 Small bowl, 1 Non-stick pan, 1 Slotted spatula, 1 Sieve, 1 Rolling pin, 1 Peeler, 1 evtl. dünne Rubber gloves
Preparation steps

Mix the quark smoothly with the buttermilk, then add the rolled oats and 2 tbsp honey. Zest and squeeze the lime. Stir half of the juice and all the zest into the soup. Ladle into bowls. Wash, dry and finely puree the blueberries. Push through a sieve and mix with the rest of the honey and lime juice. Put 2-3 tbsp of the puree in the centre of each bowl of soup. Then drag a wooden cocktail stick at intervals from the blueberry puree into the white soup to form a pattern. Serve sprinkled with mint.
