- For the cupcakes
- ⅔ cup butter
- ⅔ cup caster sugar
- 1 ½ cups self-rising flour
- 3 eggs
- vanilla extract (a few drops)
- ¼ cup warm milk
- 3 Tbsps cocoa powder
- For the topping
- ⅔ cup unsalted butter
- 2 Tbsps cream (18% fat)
- 3 cups powdered sugar
- 2 cups marshmallow cream
- vanilla extract (a few drops)
- To decorate
- ¾ cup chopped Pistachio

Preparation steps
1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 12 hole bun tin.
2.
Put the butter, sugar, flour, eggs, vanilla and milk in a mixing bowl and whisk with an electric whisk for 1 minute. Alternatively beat with a wooden spoon for 2 minutes until well blended.
3.
Divide the mixture between 2 bowls and stir the cocoa powder into one of the mixtures.
4.
Spoon each mixture side by side into the tins, as in the photo.
5.
Bake for about 20 minutes until risen and firm to the touch. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
6.
For the topping: beat the butter and cream until soft. Sift in the icing sugar and beat well.
7.
Gradually add the marshmallow cream and beat until smooth. Beat in the vanilla.
8.
Spoon into a piping bag and pipe on top of the cakes. Decorate with pistachios and sugar Christmas trees.
