- 24 ozs Zucchini (washed and ends trimmed)
- salt
- 2 Tbsps good-quality extra virgin olive oil
- ½ cup white wine vinegar
- ½ cup granulated sugar
- 2 cloves garlic cloves (minced)
- 4 Tbsps fresh Basil (finely chopped)
- 4 Tbsps fresh parsley (finely chopped)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 2 sprigs rosemary (for garnish)

Preparation steps

Cut the zucchini lengthwise into slices about 1/3-inch thick. Arrange zucchini in a colander, sprinkle with salt and let drain for about 2 hours.

In a large skillet, heat the oil over medium heat. Place the zucchini slices in the skillet and gently cook until both sides are golden brown, about 3 minutes per side. Cook in batches if necessary.

In a separate saucepan, bring the vinegar and sugar to a boil. Cook until the sugar has dissolved.

Place the zucchini slices in a shallow 9 x 13 glass baking dish, add garlic, and sprinkle basil and parsley over the slices. Season with salt and pepper. Pour the vinegar mixture over the zucchini and marinate, covered, overnight.
5.
Transfer to a serving platter, spooning marinade over the zucchini slices. Serve with rosemary garnish, if desired.
