- 1 Tbsp olive oil
- 1 onion (diced)
- 1 red Bell pepper (seeds removed and finely sliced)
- 1 yellow Bell pepper (seeds removed and finely sliced)
- 2 cups shredded salad
- 1 ½ cups cooked, chopped chicken
- salt

- 18 ozs Puff pastry
- flour
- 1 egg (lightly beaten)

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a large baking tray with non-stick baking paper.
2.
Heat the oil in a frying pan. Add the onion and peppers and cook over a medium heat for 5-8 minutes until softened.
3.
Remove from the heat and stir in the shredded greens and chicken. Season to taste with salt and pepper.
4.
Roll out the pastry on a lightly floured surface about 5mm|1/4" thick and cut into 4 squares. Place on the baking tray.
5.
Divide the filling between the rectangles and fold over 2 opposite corners to meet in the middle, sealing well with a little beaten egg.
6.
Brush the pastry with beaten egg and bake for 25-30 minutes, until the pastry is cooked through and golden brown. Serve hot or warm.
