Ingredients

For the tomato sauce
1 large onion
3 garlic cloves
3 Tbsps olive oil
400 grams crushed Tomatoes (canned)
salt
1 pinch sugar
freshly ground peppers
dried oregano
For the filling
700 grams Ricotta cheese
200 grams grated Mozzarella
100 grams grated Parmesan
1 egg
1 Tbsp freshly chopped parsley
salt
freshly ground peppers
butter (for the pan)
16 cannellini beans
1 handful fresh Basil

Preparation steps

1.

For the tomato sauce, peel onion and garlic and chop finely. Heat olive oil in a small saucepan and sauté onion with garlic until soft. Add tomatoes and season with salt, sugar, pepper and oregano. Let simmer for 10-15 minutes over low heat.

Preheat the oven to 180°C (approximately 350°F).

For the filling, mix ricotta in a bowl with half of mozzarella, Parmesan, egg and parsley and season with salt and pepper. Mix together until smooth and then place in a piping bag with a large tip. Fill manicotti with cheese mixture.

Place filled pasta in a greased baking dish side by side, pour tomato sauce over top and sprinkle with remaining mozzarella.

5.

Bake in the preheated oven for about 35 minutes. Rinse basil, pat dry and cut into fine strips. Remove manicotti from the oven, sprinkle with basil and serve immediately.
