Cucumber is light and low in calories, but extremely high in nutrients like vitamins, minerals, antioxidants, and fiber. The calcium from the cheese and yogurt also provide healthy fats, calcium, and satiation. 

You can also fill these cucumber rolls with other things, like chicken salad, tuna salad, or another vegetable mix.

2 Cucumber
1 ⅛ cups cream cheese
½ cup Yogurt
½ cup Cheese (e. g. Pecorino, finely grated)
cup pitted black olives (chopped)
cup Dried Tomatoes (in oil, chopped)
1 handful thyme

Preparation steps

1.

Cut the ends of the cucumbers and cut lengthways into 12 equal slices about 1" thick. Blanche quickly in salted water, rinse and drain. Pat dry and place flat on the work surface.

2.

Mix together the cream cheese, yogurt and cheese. Season with salt and ground black pepper and spread onto the cucumber slices. Add the olives, tomatoes and the thyme to one end of each slice.

Roll up from that end and arrange on a platter to serve.
