- 3 Tbsps good-quality olive oil
- 1 large onion (peeled and chopped)
- 3 cloves garlic cloves (peeled and minced)
- 2 ½ cups Tomato juice
- ½ cup dry white wine
- salt (to taste)
- 1 pinch crushed Red pepper flakes
- 9 cups little neck clam (scrubbed)
- 4 cups crushed Tomatoes (liquid included)
- 16 ozs Fettuccine

Preparation steps
1.
Heat oil in a large pan set over medium heat. Add onion and garlic; saute for 4 to 5 minutes, stirring frequently, until onion is soft. Add juice, wine, salt, red pepper flakes, clams and crushed tomatoes; bring to a boil. Cover, reduce heat to a simmer and cook for 8 minutes or until clam shells open.

Remove clams from pan, discarding any clams that have not opened.

Return sauce to a simmer and cook until liquid is reduced to about 5 cups, about 15 to 18 minutes.

Meanwhile, cook the fettuccine in a pan of salted boiling water per package instructions, until al dente.

Serve clams and tomato sauce over pasta.
