For the cupcakes
1 cup all-purpose flour
2 Tbsps cocoa powder
1 Baking powder
¼ tsp salt
1 large egg (beaten)
¼ cup caster sugar
½ cup milk
¼ cup butter (melted)
0.333 cup Dark chocolate (70% cocoa solids, chopped)
For the icing
½ cup Strawberries
1 cup powdered sugar
To decorate
¾ cup pink Sugar paste
powdered sugar
24 mini Biscuit
¾ cup white Sugar paste

Preparation steps

1.
For the cupcakes: heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in 2 x 12 mini muffin tins.

Sift the dry ingredients into a mixing bowl.

mix together the egg, sugar, milk and melted butter. Stir into the dry ingredients until just combined. Quickly stir in the chocolate.

Spoon into the paper cases and bake for about 10 minutes, until springy to the touch. Cool in the tins for 10 minutes, then place on a wire rack to cool completely.
5.
For the icing: puree the strawberries in a blender or food processor. Push through a sieve to remove the seeds.
6.
Sift in the icing sugar and beat until thick. Spread on top of the cakes.
7.
Roll out the pink sugarpaste on a surface dusted with icing sugar. Cut out rounds smaller than the diameter of the cakes with a scalloped edged cutter. Place on top of the icing.
8.
Place a biscuit on each cake, attaching with a dab of icing.
9.
Roll out the white sugarpaste on a surface dusted with icing sugar. Cut out the letters and attach to the biscuits with a dab of icing or water.
