The roulades need a little more spice? A little finely chopped chilli pepper makes the sauce more fiery and gets the metabolism going. Fresh herbs can also be worked into the sauce as desired or sprinkled freshly on the roulades.

250 grams Feta

scallions (or substitute chives)

Preparation steps

Rinse the eggplant, cut off the stem and cut lengthwise into thin slices. Cut the feta cheese into wide strips. Rinse scallions, trim, and slice off tops. Reserve the green tops.

Brush eggplant slices with a little olive oil and grill until golden brown on both sides. Meanwhile, mix 4 tablespoons olive oil, lemon juice and salt and pepper to taste. Lay strips of feta cheese on the hot eggplant slices and roll up. Tie with the green tops of scallions into rolls. Drizzle with the sauce, season with pepper and serve immediately. Serve with Greek flatbread, if desired.
