Preparation steps

Strongly whisk the yolks with the salt, mustard, and lemon juice until thoroughly combined.

Gradually incorporate the oil, whisking constantly. Start with a few drops, whisking until the oil has been completely incorporated. Increase the amount to a thin stream, then add enough oil until a thick and creamy mayonnaise has formed.
3.
Season to taste with salt, pepper, and lemon juice.
