- 4 Haas Avocados (halved and de-stoned)
- 16 Prawn (cooked and peeled)
- ¾ cup white Crabmeat (picked through for bones/cartilage)
- 1 ½ cups Lettuce
- Lime juice (from two limes)
- 1 Tbsp Chervil (chopped)
- Chervil (to garnish)
- salt
- ground Black pepper

Preparation steps
1.
Use a sharp knife to score the insides of 4 of the avocado halves in a dice pattern.
2.
Invert the avocado halves and cut away the diced avocado from the skin.
3.
Transfer to a mixing bowl and add half of the crab meat, the lime juice, chopped chervil and some seasoning before stirring well.
4.
Line the base of the 4 remaining avocado halves with the lamb's lettuce. Spoon the diced avocado and crab meat mixture on top.
5.
Garnish with the prawns, more crab meat and some more seasoning. Finish by garnishing with a sprig of chervil. Serve cold.
