- 3 cups rolled oats
- 1 teaspoon ground cinnamon
- 1 tablespoon flax meal
- ¼ teaspoon salt
- ¾ cup whole almonds
- ⅔ cup raisin
- ¼ cup Coconut oil
- 0.333 cup Maple syrup
- 1 teaspoon vanilla extract
- 1 medium, ripe Banana (mashed)
Preheat the oven to 180°C (160° fan) | 350F | gas mark 4. Spray a large baking tray with non-fat cooking spray.
Mix together the oats, cinnamon, salt, flaxseed, almonds, and raisins in a large bowl.
In a small saucepan over medium low heat, warm the coconut oil, maple syrup, and vanilla extract. Once melted together, remove from heat and whisk in the mashed banana until well combined.
Add to the dry ingredients and mix well to combine. Spread the mixture evenly across the prepared baking tray.
Bake for 25 - 28 minutes or until golden brown. Remove to a wire rack to cool and harden before serving or storing for up to one week in an airtight container.
