- 1 Tbsp olive oil
- 1 onion (chopped)
- 2 cloves garlic cloves (crushed)
- 18 ozs potatoes (unpeeled, cut into chunks)
- 4 cups vegetable stock
- 16 ozs canned Sweet corn (drained)
- ½ cup Soy cream
- salt
- peppers
- To garnish
- coarse freshly ground Black pepper
- snipped Chives
- 1 Tbsp Soy cream

Preparation steps
1.
Heat the olive oil in a large pan and cook the onion and garlic for about 5 minutes until soft but not browned.
2.
Stir in the potatoes and stock and bring to a boil.
3.
Reduce the heat and simmer for 15-20 minutes until the potatoes are tender.
4.
Add the corn and soya cream and simmer gently for 5 minutes. Season to taste with salt and pepper.
5.
Sprinkle with black pepper and chives and top with a spoonful of soya cream.
