cup butter
1 large onion (chopped)
18 ozs floury potatoes (peeled and cut into small pieces)
4 cups vegetable stock
salt
peppers
1 bay leaf
4 Tbsps cream (48% fat)
To garnish
1 Tbsp freshly cut Chives
4 rashers crisply grilled, fatty Bacon

Preparation steps

Heat the butter in a large pan and add the onion. Cook slowly over a low heat for about 5 minutes until softened.

Add the potatoes, stock, bay leaf and a sprinkling of salt and pepper and bring to a boil. Simmer for 20-25 minutes, skimming off any froth, until the potatoes are tender. Cool slightly and remove the bay leaf.
3.
Transfer the soup in batches to a blender or food processor and blend until smooth. Return to the pan and stir in the cream. Season to taste with salt and pepper.
4.
Reheat gently, but do not boil. Pour into serving bowls, sprinkle over the chives and crumble the bacon on top.
