- 200 grams Puff pastry dough (refrigerated cabinet)
- 20 grams soft butter
- 60 grams sugar
- 2 eggs
- 1 generous pinch grated Lemon peel
- 500 grams Quark
- 30 grams raisins
- 1 sm can Clementine
- liquid butter (for brushing)
Preparation steps

Drain oranges from the can and leave to drain. Separate the eggs. Beat egg whites until stiff. Combine egg yolks with sugar and butter until fluffy. Stir in lemon peel and quark. Fold in raisins and egg whites. Roll out puff pastry, spread cheese filling on top, while leaving a 3 cm (approximately 1 inch) wide edge free on all sides.

Distribute oranges on the cheese mixture, fold the pastry inwards on 3 sides and roll the strudel up loosely without breaking. Place on a baking sheet lined with parchment paper, brush with melted butter and bake in the oven at 180°C (approximately 350°F) for about 40 minutes (test doneness with a toothpick). Remove and let cool then slice and serve.
