300 grams fresh Chanterelle
200 grams fresh Wild mushroom (mushrooms, chestnuts, Rotkappen, etc.)
1 shallot
3 Tbsps butter
salt
freshly ground peppers
100 milliliters dry white wine
500 milliliters Vegetable broth
4 Tbsps Crème fraiche
100 milliliters Whipped cream
Nutmeg
1 Tbsp scallions
4 Chives

Preparation steps

Rinse and cut the mushrooms into smaller pieces. Peel, halve and dice the shallot. In a saucepan, melt the butter and saute the mushrooms. Add the shallot and saute briefly.  Season with salt and pepper. Remove approximately 1/3 of the mushrooms and set aside.  Pour the white wine into the pan and bring to a boil. Pour in the vegetable stock and simmer for 15 minutes. Add the sour cream and whipping cream. Puree the contents of the pan. Season with salt, pepper and nutmeg. Replace the mushrooms and heat.

Sprinkle with chives and serve.
