- For the soup
- 4 Kohlrabi (with green tops)
- 4 Apple
- 3 Tbsps butter
- 1 l Vegetable broth
- 400 grams Whipped cream
- salt
- peppers
- freshly grated Nutmeg
- chopped Walnut (to taste)

- 4 slices Bread
- 250 grams Quark
- 100 grams Sour cream
- chopped fresh parsley
- salt
- peppers

Preparation steps
1.
Rinse the kohlrabi and apples and set the tender green kohlrabi aside. Peel the kohlrabi and apples and core apples. Cut both into small cubes and sauté in butter about 5-7 minutes. Pour in the broth, cover and simmer over medium heat for 10-15 minutes.

Pour in the cream and puree with a hand blender until smooth. Heat the soup and season with salt, pepper and nutmeg. Chop the green kohlrabi and sprinkle over the soup with the walnuts.
3.
Stir in the quark and the sour cream until smooth, stir in the parsley and season with salt and pepper. Serve with bread.
