1 shallot
1 garlic clove
2 Tbsps butter
1 ½ Tbsps Pastry flour
150 milliliters dry white wine
500 milliliters Vegetable broth
150 grams Blue cheese (such as Stilton)
150 milliliters Whipped cream
50 grams freshly grated Parmesan
salt
freshly ground peppers
4 Anchovy
4 sheets Arugula

Preparation steps

Peel and finely chop the shallot and garlic. Sweat the shallot and garlic in hot butter. Sprinkle with flour and let brown slightly. Deglaze with the white wine and broth. Whisk vigorously, breaking up any lumps. Simmer over medium heat for about 10 minutes. Cut 4 slices of blue cheese and set aside. Cube the remaining blue cheese.

Pour the soup through a sieve. Stir in the cream, parmesan and cubed cheese. Stir over low heat for another 5 minutes. Season with salt and pepper. Blend with a hand blender until frothy. Serve garnished with anchovies, the remaining cheese and coarsely chopped arugula.
