½ cup unsalted butter
2 cups all-purpose flour
0.333 cup dried Cranberry
1 unwaxed Orange (finely grated zest)
¼ cup sugar
1 large egg (beaten)
1 tsp Baking powder
1 tsp milk
To finish
3 Tbsps Cranberry jam
Whipped cream
powdered sugar

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
2.
Put the butter and flour into a mixing bowl and rub together with your fingertips until the mixture resembles breadcrumbs.
3.
Stir in the cranberries, orange zest, sugar and egg with the baking powder and milk. Mix together well to make a soft dough.
4.
Divide the dough into 8 and shape each piece into a rough mound.
5.
Put onto the baking tray and bake for 15-20 minutes until pale golden. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
6.
Split the cakes in half through the centres and spread the bases with jam. Sandwich the halves together with whipped cream. Sift icing sugar over the tops.
