The cucumber not only makes the cold dish an absolute fresh kick, but also gives it a beautiful appearance: the water contained in high quantities "cushions" the skin and increases the daily fluid intake in a playful and easy way. A cucumber ferment closely related to insulin can also have a positive effect on the blood sugar level.

Instead of sesame seeds, the cold peel can also be enhanced with trout caviar, for example. The cold dish can be served with flat bread or as a starter without a side dish.

1 organic lemon
500 milliliters Vegetable broth
3 sprigs Peppermint

4 Tbsps Sesame seeds (or trout caviar)

Preparation steps

Peel the cucumber, remove the seeds, and coarsely grate.

Peel and finely chop the garlic.

Mix the yogurt with the garlic, lemon juice, and vegetable broth. Combine thoroughly, then mix in the cucumber.

Season the soup to taste with salt and pepper. Remove the mint leaves from the stem, finely chop, and stir into the soup. Chill the soup for at least 2 hours in the refrigerator.

5.

Toast the sesame seeds in a dry pan. Sprinkle over the soup just before serving. Garnish with the mint sprigs, and serve.
