Even smarter

The coffee in the cake makes us awake and more efficient through caffeine. But it can do more than that. Researchers found out that this drink can protect us from cardiovascular diseases by keeping the vessels elastic and preventing calcification. Walnuts are also good for our blood vessels because they contain valuable omega-3 fatty acids that keep the heart and blood vessels fit.

With this coffee cake you can be creative. Vary the spices, for Christmas, for example, ground cardamom or gingerbread spices are suitable. In summer you can replace the cinnamon and cloves with a fresh, scraped vanilla pod. You are also free to choose the nuts. How about ground hazelnuts or almonds, for example.

250 grams butter
200 grams sugar
5 eggs
salt
200 grams Pastry flour
200 grams ground Walnut
1 tsp Baking powder
1 Tbsp Cocoa
1 pinch ground cinnamon
1 pinch ground cloves
50 milliliters Coffee (freshly brewed and cooled)
100 milliliters milk
For the decoration
2 Tbsps Coffee (freshly brewed and cooled)
150 grams powdered sugar
50 grams chopped Walnut

Preparation steps

Grease a loaf pan with butter and dust with flour.

For the cake batter, beat the butter and sugar until creamy and mix in the eggs gradually with a pinch of salt.

Mix the flour with ground walnuts, baking powder, cocoa powder and spices. Mix the coffee with milk and add into the egg mixture alternately with the flour mixture until the batter is hard enough to fall from the spoon.

Pour the mixture into the greased loaf pan, spread evenly and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for 50-60 minutes. Check with toothpick if done.

Remove the cake from the oven, let it rest for about 15 minutes, release gently from the mold and leave to cool on a wire rack.

To decorate, mix the coffee with the powdered sugar into a thick syrup.

Drizzle the cake with the coffee syrup and sprinkle with walnuts. Let dry and serve.
