- 600 grams Stockfish
- 300 milliliters milk
- 125 milliliters olive oil
- 2 garlic cloves
- ½ lemon (juice and zest)

Preparation steps

Soak cod in cold water for at least 12 hours. Change water several times. Drain, place in a saucepan, cover with milk and bring to a boil, cover. Turn off heat and let rest for 8-10 minutes.

Preheat oven's broiler.

Remove cod from milk and set milk aside. Remove skin, shred fish with a fork and remove bones. Combine fish, about 250 ml (approximately 1 cup) of reserved milk, half of the oil, peeled and minced garlic and lemon zest. Beat until mixture has a fluffy mashed potato consistency. Add more oil or milk as needed. Season with lemon juice and pepper.

Place mixture in an ovenproof dish and cook under the broiler until golden brown. Remove and serve hot.
