- 8 ozs Pie crust
- 1 cup fresh Pumpkin (puree)
- 2 eggs (beaten)
- ⅔ cup cream (30% fat)
- ½ cup dark brown sugar
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- 1 pinch ground cloves
- ¼ tsp grated Nutmeg
- ½ tsp Mixed spice

Preparation steps
1.
Heat the oven to 375°F. Grease a 9" pie tin.
2.
Roll out the pastry and line the tin.
3.
Place the remaining ingredients in a mixing bowl and beat well until combined.
4.
Pour into the pastry case and bake for about 40-50 minutes until the filling has set. Leave to cool in the tin. Serve warm with whipped cream.
