- 3 cups self-rising flour
- 1 tsp Baking powder
- 1 pinch salt
- ⅓ cup butter
- 3 Tbsps caster sugar

Preparation steps
1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Grease and flour a large baking tray.
2.
Mix together the milk, vanilla and lemon juice and set aside.
3.
Sift the flour, baking powder and salt into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and make a well in the centre.
4.
Pour the milk mixture into the well and mix in quickly with a knife.
5.
Turn out onto a lightly floured surface and knead lightly until smooth, adding a little more flour if needed. Pat into a round about 4cm|1 1/2" thick.
6.
Cut out rounds with a 5cm|2" cutter. Lightly press together the trimmings and cut out more rounds.
7.
Place on the baking tray and brush the tops with milk. Bake for about 10 minutes until well risen and golden. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely. Serve with jam and clotted cream.
