- ¼ cup caster sugar

1 Paper towel, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Fine-mesh sieve, 1 Tablespoon, 1 Bowl
Preparation steps
1.
Beat the butter and sugar in a mixing bowl until smooth.
2.
Stir in the flour to form a dough.
3.
Roll out on a floured surface to 1 cm|1/2" thick. Cut into rounds and place on a greased baking tray. Chill for 20 minutes.
4.
Heat the oven to 190°C (170° fan) 375°F gas 5.
5.
Bake for 15-20 minutes, until pale golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
6.
Sandwich the biscuits together with lime curd. Sift a little icing sugar over the tops.
