1 cup Pecan
1 cup Walnut
½ cup Date
cup Coconut oil
½ cup Coconut flakes
1 Orange (zest)
½ Orange (juice)
½ tsp honey
½ cup flaxseed
For the filling
½ cup cream cheese
cup unsalted butter
¾ cup diced candied citrus peel
½ cup powdered sugar

Preparation steps

1.
Grease a 12 hole shallow bun tin.
2.
Place the pecan nuts and walnuts into a food processor and blitz until fine crumbs. Remove and set aside.
3.
Place the dates, coconut oil, desiccated coconut, orange zest and juice and honey in the food processor and blitz to a paste. Add the pecan and walnut mixture and the ground linseeds and process again.
4.
Divide the mixture into 12 balls, then press each one into the tins. Place in the freezer for 30 minutes.
5.
For the filling: beat together the cream cheese, butter, candied peel and icing sugar until smooth.
6.
Remove the pies from the freezer and gently remove them from the tins.
7.
Sandwich together in pairs with the creamy filling.
8.
Store in the refrigerator.
