½ cup butter
½ cup Golden syrup
cup honey
3.333 cups flour
1.333 cups sugar
1 tsp ground cinnamon
1 Tbsp Mixed spice (e. g. Lebkuchen spice mix)
1 tsp Baking powder
2 eggs
1 unwaxed lemon (zest and juice)
flour (for working the dough)
To garnish
2 Tbsps powdered sugar

Preparation steps

1.
Heat the butter with the syrup and honey in a pan, stirring, then leave to cool.

In a bowl, mix together the flour, sugar, cinnamon, spice mix and baking powder. Knead together with the honey mixture, eggs, lemon zest and juice to form a smooth dough that comes away from your hands easily. Wrap in cling film and chill in the refrigerator for at least 1 hour.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.

Roll the dough out on a floured surface to a thickness of 5-6 mm. Cut out shapes as desired, such as candy canes, and lay on the baking tray. Bake in the oven for 15 minutes until golden, then remove from the oven and leave to cool.
5.
To decorate, mix the icing sugar with a few drops of water to make a thin glaze, and spread this over the candy canes. Sprinkle with coloured sugar and leave to dry.
