- 60 grams Dark chocolate (min. 60% cocoa)
- 2 large eggs
- 3 Tbsps melted butter
- 80 grams sugar
- 1 tsp grated Orange peel
- 175 grams Pastry flour
- 1 packet Baking powder
- 1 tsp Cocoa
- 2 Tbsps Shelled pistachio
- 2 Tbsps dried Cranberry

Preparation steps
1.
Preheat the oven to 180°C (approximately 360°F) convection. Grease the loaf pan with butter and dust with flour.

Melt chocolate over the hot waterbath and let cool. Beat the eggs until foamy and gradually stir in melted butter, sugar, and orange peel. Fold in the chocolate. Mix the flour, baking powder and the cocoa powder and fold into the egg mixture. Finally, stir in the pistachios and cranberries.

Pour the batter into the loaf pan, spread until smooth and bake in oven for about 50 minutes on the middle rack, occasionally checking doneness with a toothpick. Allow to cool in the pan and, once cool, carefully loosen from the pan. Cut into pieces and serve.
