frozen Spinach (around 450 grams) (approximately 16 ounces)
1 onion
1 garlic clove
2 sprigs Sage
40 grams butter
salt
freshly ground peppers
2 tsps grated Lemon peel
2 packets Gnocchi (each around 400 grams) (approximately 14 ounces) (refrigerated)
30 grams grated Parmesan
50 grams grated, young Gouda

Preparation steps

For the sautéed spinach: Thaw the spinach. Peel the onion and garlic and dice. Rinse the sage, pat dry and finely chop half. Drain the spinach, squeeze out excess liquid and chop coarsely. Sauté the onion, garlic and chopped sage in 20 grams (approximately 1 1/2 tablespoons) butter until translucent. Add the spinach and sauté for about 5 minutes. Season with salt and pepper and add the lemon zest.

For the gnocchi: Cook the gnocchi according to the package directions. Transfer the spinach and drained gnocchi to a baking dish and sprinkle with cheese. Sprinkle with the remaining chopped butter and sage and bake in a preheated oven (200°C) (approximately 400°F) for about 15 minutes.
