Peel ginger and grate finely on a grater. Rinse oranges and dry. Use a rasp to zest the outside of one orange. Remove peel of another orange with a potato peeler to create a large curl. Juice all oranges. Rinse carrots, peel and chop.

Heat olive oil in a saucepan. Sauté ginger and carrot while stirring. Sprinkle sugar into pan and carmelize. Deglaze pan with broth and cook for about 10 minutes. Purée mixture in a blender together with orange zest and orange juice. Season to taste with salt, pepper and curry. Serve warm or cold in bowls garnished with orange peel.
