4 boneless, skinless Chicken breasts (halves)
salt (to taste)
freshly ground Black pepper (to taste)
1 cup seasoned, italian breadcrumbs
2 fresh eggs (beaten)
2 Tbsps Oil
1 clove garlic cloves (peeled and minced)
1 fresh lemon (sliced into wedges)
fresh parsley (for garnish)

Preparation steps

1.
Rinse chicken under cold running water and pat dry with paper towels. Using a meat tenderizer or mallet, pound the chicken until flattened. Season both sides with salt and pepper.

Dip the flattened chicken into the beaten eggs and coat completely with breadcrumbs.
3.
Heat the oil in a large skillet set over medium heat. Add the garlic and saute for 1 minute or until fragrant. Using a slotted spoon, remove the garlic and discard.
4.
Place the chicken in the skillet and cook for about 5 minutes per side, or until golden brown and fork tender. Cooking time will vary depending on the thickness of the chicken.
5.
Divide chicken between serving plates and garnish with lemon wedges and parsley. Serve.
