- ⅔ cup self-rising flour (sifted)
- ½ cup superfine caster sugar
- ½ cup butter (softened)
- 2 large eggs
- 1 tsp vanilla extract
- 30 fresh Raspberries
Preparation steps

Preheat the oven to 190°C (170 fan) | 375°F | gas 5 and line 10 mini loaf tins with paper cases.
2.
Place all the ingredients except the raspberries in a food processor and blitz until smooth and combined.
3.
Divide the mixture evenly between the cases and push 3 raspberries down the middle of each loaf cake. Bake for 12 - 15 minutes or until risen and golden. Remove the cakes from the tin to a wire rack to cool.
