- 200 grams Crème fraiche
- 100 grams Mascarpone
- salt

- 1 Tbsp balsamic vinegar
- Beet Greens
- 40 grams coarsely grated pecorino romano

Preparation steps

Rinse beets and cook unpeeled for 40 minutes in salted water, drain, rinse in cold water and peel. Set aside approximately 100 grams (approximately 1/2 cup) of beets and grate coarsely. Mix the extra beets with creme fraiche, add mascarpone, purée and season with salt, pepper and balsamic vinegar.

Serve the beet cream in bowls with grated beets, sprinkle with pecorino and serve with some rinsed beet leaves.
