500 grams green Beans

2 scallions
1 tsp Mustard
2 Tbsps Sherry vinegar
50 milliliters olive oil
1 pinch sugar

Preparation steps

1.

Trin, rinse and blanch the beans for about 8 minutes in boiling salted water. Drain and immerse in ice water to cool.

Hard cook the eggs for about 10 minutes, rinse in cold water, peel and cut in half. Chop four of the egg halves and set the other four aside. Peel and finely dice the shallots. Stir in the mustard and the vinegar and gradually stir in the olive oil to make a vinaigrette. Season with sugar, salt and pepper.

3.

Rinse the chives, shake dry and cut into small pieces. Drain the beans and mix with the vinaigrette, chopped eggs, chives and capers. Arrange on plates and garnish with the remaining egg halves.
