- 1 shallot
- 1 garlic clove
- 1 Leek
- 1 rosemary
- 2 thyme
- 4 Lamb cutlets (about 120 grams or 4 ounces)

- 5 Tbsps olive oil
- 100 milliliters dry white wine
- 200 milliliters lamb stock
- 2 Tbsps cold butter

Preparation steps
1.
Peel shallot and garlic and finely chop. Rinse, trim and very finely chop leeks. Rinse herbs, shake dry, pluck leaves and finely chop.

Rinse lamb chops, pat dry and season with salt and pepper. Heat 2 tablespoons of olive oil in a pan and fry on each side for 3-4 minutes. Remove and keep in warm in oven at 50°C (approximatey 125°F).

Saute shallot and garlic in drippings. Deglaze with white wine and stock and boil down over high heat. Saute leeks in remaining oil along with herbs and season with salt and pepper.

Remove chops from oven, preheat broiler, cover chops with leeks and cook for 3-5 minutes under broiler, watching carefully. Boil sauce again, stir in cold butter and serve with chops.
