For the puddings
2 Bread roll (1 day old, cut into pieces)
0.333 cup milk
3 Tbsps sugar
0.333 cup butter
½ tsp vanilla extract
2 eggs (separated)
1 Tbsp Golden raisins
For the apples
¼ cup butter
4 eating Apple
¼ tsp ground cinnamon
cup sugar
¼ cup white wine
To decorate
powdered sugar

Preparation steps

1.
For the puddings: soak the bread pieces in the milk for 30 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4 individual pudding basins or ramekins and sprinkle with 1 tablespoon of the sugar.

Beat the butter with the vanilla extract until soft and creamy. Gradually beat in the egg yolks until smooth.

Squeeze out the bread slightly and add to the butter mixture with the sultanas.

Whisk the egg whites until stiff but not dry, then gradually whisk in 2 tablespoons sugar until blended. Carefully fold the egg whites into the bread mixture.

Spoon the mixture into the basins and bake for about 20 minutes until golden.

For the apples: cut the apples into wedges. Heat the butter in a frying pan, add the apple wedges and cook for 2 minutes.
8.
Sprinkle with cinnamon and sugar and cook for a further 5 minutes, then pour in the wine. Bring to a boil and bubble until thickened slightly.
9.
Place the puddings on serving plates, dust with icing sugar and serve with the glazed apple wedges. Decorate with cinnamon sticks.
