4 Tbsps olive oil
4 pcs Barramundi
2 Limes (juiced)
4 scallions (cut into thin rings)
Lime wedge (to garnish)

1 Cutting board, 1 Small knife, 1 Sieve, 1 Peeler, 2 Pots mit Deckel, 2 Teaspoons, 1 Steamer basket, 1 Immersion blender, 1 Measuring cups

Preparation steps

Wash the tomatoes, drop into boiling water for a few seconds then skin, removed the seeds and chop the flesh.

Place the tomatoes, garlic, almonds, 1 tablespoon of parsley, the basil and oil in a blender or food processor and pulse quickly to make a coarse paste.

Wash the fish and pat dry with kitchen paper. Spread the pureed tomato mixture on both sides of the fish and set aside to marinade for 1 hour.

Preheat the oven to 200°C (180ºF) 400ºF, gas 6. Cut parchment paper into 4 pieces big enough to hold the fish and lay a slice of fish on each piece. Spoon over the tomato mixture, remaining parsley and lime juice and season with salt and pepper. Fold into a parcel and scrunch the edges to seal.
5.
Place on the parcels in a roasting pan and cook for 15 to 20 minutes. Before serving open each parcel and sprinkle the fish with the spring onion. Serve immediately garnished with lime edges and coriander leaves.
