4 Tbsps runny honey
3 Tbsps Cider vinegar
3 Tbsps olive oil
4 yellow Peaches (pitted and sliced)
8 fresh Figs (quartered)

Preparation steps

1.
Remove the fat layer of the duck breasts. Cut the meat into thick slices and place in a dish.
2.
Mix honey, cider vinegar and olive oil. Pour the mixture over the meat, stir, cover with clingfilm and let marinate for 30 minutes in the refrigerator.
3.
Preheat oven 200°C | 400F | gas 6.
4.
Cut four large squares of parchment paper and spread them out on the worktop.
5.
Top with fruit and meat slices and drizzle over the marinade.
6.
Fold the paper up and around the ingredients, folding across the top and twisting the ends to secure.

Place a small ovenproof dish of water in the bottom of the oven. This prevents drying out

Place the papillotes on a baking tray and place in the oven for 15-20 minutes.
9.
Serve straight from the oven.
