- 1 ⅔ cups cream (48% fat)
- 14 ozs white chocolate (broken)
- ¼ cup unsalted butter (cut into small pieces)
- 1 tsp vanilla extract
- colored sparkling sugar (purple, orange, blue, brown)

Preparation steps
1.
Heat the cream in a pan and bring to a boil. Immediately remove from the heat.
2.
Put the chocolate and butter in a bowl and pour on the hot cream. Stir until the mixture is smooth and allow to cool. Stir in the vanilla, then whisk for about 5 minutes until thickened.
3.
Cover the bowl and chill for about 2 hours until firm firm enough to shape into balls.
4.
Take teaspoons of the truffle mixture and roll into smooth balls.
5.
Roll the balls in the coloured sugar and chill for at least 20 minutes before serving.
