750 grams Asparagus
1 onion
2 Tbsps butter
750 milliliters Chicken broth
1 cup Whipped cream
salt
freshly ground peppers
lemon juice
250 grams cooked ham (in strips)
½ bunch Chives

Preparation steps

Rinse, peel and cut asparagus into 3 cm (approximately 1 inch) long pieces. Place asparagus tips aside. Peel onion, chop and fry in a large pot with butter. Add asparagus pieces and quickly sauté. Pour in chicken stock and simmer for about 20 minutes.

Pour asparagus and onion chicken stock into a blender and purée, then strain through a sieve. Transfer back to the pot. Add 1/2 cup of cream and bring to a boil. Season with salt, pepper and lemon juice. Add ham and asparagus tips and cook for another 5 minutes. Finely dice chives. Whip remaining cream until stiff and fold into soup before serving. Ladle into soup bowls, garnish with chives and serve.
