250 grams honey
250 grams cane sugar
150 grams butter
100 grams ground almonds
400 grams Pastry flour
1 teaspoon cinnamon
2 teaspoons Gingerbread spice
1 tablespoon Lemon peel
1 tablespoon Cocoa
1 egg
1 teaspoon potatoes
2 centiliters Rum
For topping
150 grams dark Couverture
150 grams bright Couverture

Preparation steps

1.

For the cookies, heat honey, sugar and butter in a pan stirring constantly until the sugar has dissolved. Transfer to a bowl and let cool. Add egg, ground almond, flour and all the spices and stir to combine.

Stir the baking soda with the rum and add to the batter. Mix or knead the batter until the dough no longer sticks and begins to shine. Add more flour if necessary.

Cover and refrigerate overnight.

Roll out the dough on a lightly floured surface and cut out circles about 8 cm (approximately TK inches) in diameter. Place the cookies on a parchment-lined baking sheet. Bake in preheated oven at 180°C (approximately 350°F) for about 15 to 20 minutes. Cool on a wire rack. 

5.

For topping, melt the chocolates in sperate bowls over a simmering water bath. Drizzle over the cooled cookies as desired.
