- 2 cups self-rising flour
- 1 tsp Baking powder
- ¼ cup unsalted butter
- ¼ cup caster sugar
- 1 unwaxed lemon (finely grated zest)
- 3 ozs Blackberry
- ½ cup Buttermilk (more if needed)
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking tray.

Sift the flour and baking powder into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar.

Stir in the lemon zest. Very gently stir in the blackberries. Do not overmix, as the blackberries can easily become crushed

Gently stir in the buttermilk to form a soft dough. Turn out onto a lightly floured surface and knead lightly until smooth.
5.
Pat out 2.5cm|1" thick. Cut out rounds with a floured 5cm|2" cutter.
6.
Place on the baking tray and bake for 10-15 minutes until well risen and golden. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
