- 1 red onion
- ½ bunch scallions
- 1 white onion
- 1 Tbsp butter
- 3 cups Yogurt (0.1% fat)
- 600 milliliters Chicken broth
- salt
- freshly ground Black pepper
- 2 Tbsps Pastry flour
- 3 egg yolks
- 1 ½ Tbsps lemon juice
- 1 Tbsp Cumin
- 1 pkg Papadam

Preparation steps

Peel the red onion and cut into rings. Rinse, clean and slice the scallions on the diagonal. Peel and finely chop the white onion.

Melt the butter in a saucepan and saute the white onions 2 minutes without browning. Add the broth, season with salt and pepper, cover and simmer 15 minutes.
In a bowl, whisk together the yogurt, flour, egg yolks and lemon juice and strain through a sieve into the simmering soup. Simmer, stirring constantly for 10 minutes. Ladle the soup into bowls and divide the red onion rings and scallions among the bowls. Sprinkle with cumin and serve with papadum.
