- 3 sheets gelatin
- 250 grams mixed fresh Wild berry (such as raspberries, red currants, blackberries)
- 1 Vanilla bean
- 400 grams Whipped cream
- 100 grams sugar
- 200 grams frozen Wild berry
- 1 Tbsp powdered sugar
- fresh Woodruff (for garnish)

Preparation steps

Soften the gelatine in cold water. Wash the fresh berries and pat dry with a paper towel. Cut the vanilla pod in half and scrape the vanilla seeds. Add the vanilla, cream and sugar to a saucepan and let simmer on low heat for 10 minutes. Remove from the heat, squeeze out the gelatin, and add it to the mixture. Divide into glasses, let 50 g (approximately 2 ounces) of fresh berries sink into the panna cotta and cool at least 2 hours.

Add the frozen berries and the powdered sugar to a saucepan, and bring to a boil, stirring often. Reduce the heat and simmer for 5 minutes. Remove from the heat and let cool. Top the pannacotta with the sauce and theremaining fresh berries. Garnish with the woodruff to serve.
